<hr />Se taie cele doua capete ale franzelei, apoi cu ajutorul unui  cutit de transat  se goleste franzela de miez. Se scot samburii  maslinelor si se dau maslinele  prin masina de tocat impreuna cu sunca  presata sau salamul. Se adauga untul  amestecat cu sardelele si zeama de  lamaie, iar la sfarsit se pun gogosarii  taiati cubulete. Se umple  franzela, se tine o ora la rece, apoi se taie felii cu  grosimea de 1 cm  si se serveste.</li>

<hr />Ficateii de pasare se curata de  fiere si pielite si se fierb 10 min. in apa cu  sare si o foaie de  dafin. Se strecoara, se lasa sa se raceasca, se asaza in  forme pentru  aspic, se decoreaza cu felii de morcov si patrunjel fierte si  taiate cu  un dispozitiv de taiat ornamental legumele. Se incalzeste putin   aspicul, se toarna peste ficatei si se pun formele la rece. Dupa ce  aspicul s-a  intarit, se scot ficateii din forme, incalzindu-se putin  formele in apa  fierbinte. Se asaza pe un platou si se decoreaza cu  verdeata, cubulete de aspic  si filigran de unt.</li>

<hr />Se aleg ciuperci cu palarii mari, se taie cozile, se spala in mai  multe ape, se  asaza intr-o tava cu putin ulei si se presara cu sare.  Ceapa se toaca marunt, se  caleste in ulei, se adauga costita si sunca  presata trecute prin masina de  tocat, piper si sare si se mai calesc  putin impreuna. Se ia vasul de pe foc, se  adauga verdeata tocata,  mujdeiul de usturoi, doua oua fierte si tocate si doua  oua crude. Cu  aceasta compozitie se umplu ciupercile, se da tava la cuptor si se   lasa, pana ce ciupercile sunt gata.</li>

Cand sunt aproape gata, se scoate tava din cuptor si se  asaza pe  fiecare ciuperca o feliuta de costita afumata, peste care se  toarna 1-2  lingurite de ou batut bine, amestecate cu sare si piper si  se da tava din nou la  cuptor. Dupa ce ciupercile sunt fripte, se asaza  pe un platou, se toarna pe  deasupra mujdei de usturoi si se presara cu  verdeata tocata.</li>

<li>ciuperci (conserva) 75 g</li>
<li>cimbru 1/2 fir</li>
<li>ulei 30 g</li>
<li>piper<br />
<hr />Din faina, lapte, ulei, drojdie si putina sare se prepara o coca, se lasa sa  creasca cel putin o ora, se framanta din nou, se intinde cu sucitorul si se  asaza intr-o tava unsa cu ulei. Se unge aluatul pe deasupra cu ulei, se presara  svaiterul ras, carnea afumata sau salamul taiat julien sau cuburi, cimbru,  ciupercile taiate felii si piper. Se lasa sa creasca 30 min., se da tava la  cuptor si se coace la un foc potrivit. Se consuma calda.</li>

<li>dulceata sau gem 200 g</li>
<li>lapte 250 ml</li>
<li>sare<br />
<hr />Osanza se da de doua ori prin masina de tocat. Se amesteca 300 g osanza cu 100 g  faina. Din restul de 100 g osanza, 400 g faina, drojdie, lapte, un ou si sare se  prepara o coca moale care se lasa sa creasca. Dupa ce coca a crescut, se intinde  cu sucitorul o foaie cu grosimea de circa 1 cm. Pe aceasta foaie se intinde  amestecul de osanza cu faina. Foaia se impatureste in patru, se da la rece si se  intinde din nou, repetandu-se toata operatia de patru ori, la intervale de 15  min. Se taie apoi patrate cu latura de 6-7 cm, pe care se asaza cate o lingurita  de dulceata sau gem. Se impaturesc patratele in forma de triunghi si se coc la  un foc potrivit. Dupa ce s-au copt, se pudreaza cu zahar.</li>

<hr />Laptele in care s-a pus zaharul vanilat se fierbe incet.Se da deoparte si se  acopera pentru a nu-si pierde aroma. Ouale sparte se pun intr-un vas cu zaharul  si se bat bine.Se adauga laptele si sarea , amestecand tot timpul. Se ard 8  linguri de zahar intr-o cratita. Zaharul trebuie sa imbrace marginile.Cand tot  fundul si marginile sunt acoperite, se lasa sa stea 2-3 min. Se toarna  compozitia . Se firbe acoperit, pe baia de apa , in cuptor ,30-40 min.,avand  grija ca apa din vas sa fie inlocuita, pe masura ce scade, cu alta apa , tot  fierbinte .Cratita in care se face crema trebuie sa fie cufundata 3/4 in apa.  Cand crema se desprinde de pe margini se poate scoate. Se lasa sa se  raceasca.Dupa aceea se pune la gheata si se rastoarna inainte de a fi servita.</p>

<hr />Aluatul.Se fierbe laptele cu uleiul,sarea si zaharul. Se adauga faina si se  amesteca pana se desprinde de pe peretii vasului (ca o mamaliguta). Se lasa la  racorit si apoi se amesteca cu ouale intregi unul cate unul. Nu se pune un ou  pana ce celalalt nu a fost complet incorporat.Se fac formele si se dau la cuptor  la foc mare 25-30 min. In primele 20 min nu se deschide cuptorul, deoarece  aluatul oparit da inapoi foarte usor. Crema de vanilie.Laptele se fierbe cu  zaharul vanilat si se lasa la racorit (vasul se acopera pentru a nu se pierde  aroma).Se freaca galbenusurile cu zaharul, se adauga faina si se dilueaza cu  laptele, turnandu-se putin cate putin. Se amesteca toate acestea pe baia de apa  pana se ingroasa bine, apoi se lasa sa se raceasca. Untul se adauga dupa ce s-a  racit putin. Glazura.Se amesteca apa, zaharul, cacao si untul pe baia de apa  ,pana se ingroasa.</p>
